My scone mix uses strong flour, as I have used for many years. This gives you scones with fantastic height and a great texture. Seriously tasty!

Ready to try it yourself?

You Will Need:
  • 1 Medium egg
  • 80g unsalted cubed butter
  • 190ml water
  • Extra flour for dusting
  • Egg or milk to glaze
  • ​A 7cm cutter

Step 1

Preheat the oven to 220°C (200°C Fan), Gas Mark 7 and line a baking tray with parchment. Lightly rub the butter into the entire scone mix to give a breadcrumb like texture.

Step 2

Mix in the egg and half the water. Gradually add the remaining water to form a soft dough. On a floured work surface fold the dough in half then turn through 90 degrees. Repeat this folding and turning 3 times. Be careful not to overwork your dough. Roll the dough to 2.5cm/1in thick.

Step 3

Using a 7cm cutter, stamp out rounds and place them onto the baking tray.

Step 4

Any leftover dough can be worked and rolled again. Brush the tops with egg or milk to glaze. Place on middle shelf of the oven and bake for 15 minutes, or until risen and golden brown. Leave to cool, split in half and serve with your favourite fillings.
