Zesty Lemon & Lime Icing Mix - product packaging

Ready to try it yourself?

You Will Need:
  • One 270g pack of Paul Hollywood Zesty Lemon and Lime Icing Mix
  • 135g softened butter
  • Splash of milk (optional)


In a large bowl beat the butter until soft and creamy. Add the Icing Mix to the butter. To avoid causing a cloud of icing dust, work the Icing Mix into the butter by hand using a spoon or a spatula first, then whisk for another minute until smooth. If needed, add a splash of milk to reach the desired consistency.
Enough to fill and top an 8" sandwich cake or 12 cupcakes.


To Make a Drizzle:
Weight 100g of Icing Mix into a medium bowl. Add 1 tbsp of lemon or lime juice and stir until you have a smooth drizzle.

Whipped Cream

To Make Lemon & Lime Whipped Cream:
Whip 100g of double cream until it forms soft peaks. With 135g of Icing Mix, mix in half of the icing until smooth then add the remaining half to avoid causing a cloud of icing dust. Be careful not to over-whip the cream.

My Hints & Tips to Bake Bold

Perfect with my Lemon & Lime Zesty Sponge Cake Mix.
Add the zest of a lime to the buttercream for extra zing.
For an adult twist to a drizzle replace the milk with 1 tbsp of Gin.
