Tomato & Thyme Bloomer Mix - product packaging

Ready to try it yourself?

You Will Need:
  • 3 tsp oil
  • 250ml water
  • 1 large bowl

Step 1

In a large bowl, combine the whole mix, oil and 250ml of the water. Add the remaining water a little at a time until you have a soft, sticky dough and all the mix is incorporated. You may not need all the water.

Step 2

Put in a lightly oiled bowl, cover with cling film and prove the dough until doubled in size. 

Step 3

Tip onto a floured surface, knock back, which means take the air out of the dough, do this be gently kneading and form the bloomer. Do this by flattening the dough to form a rectangle with the long side facing you. Fold the furthest side to the centre and roll towards you until the seam is on the bottom. Tuck the ends under to give the final bloomer shape.

Step 4

Place the loaf onto a floured baking tray. Leave to prove, covered, until doubled in size. I like to double prove my bakes as this enhances the flavour. Lightly dampen the top of the loaf, dust with flour and lightly rub in. Make 4 diagonal slashes across the top, 2 to 3cm deep. Bake in preheated oven 200°C (180°C Fan), Gas Mark 6 for 25 minutes. Reduce the oven temperature to 180°C (160°C), Gas Mark 4 for a further 10 minutes for the perfect loaf which should sound hollow when tapped on the base. Cool on a wire rack.

Enhance this bread by adding chopped pitted olives and sun-dried tomatoes to the dough before baking for an intense flavour experience.
