You Will Need:
  • 1 medium egg
  • 80g unsalted cubed butter
  • 180ml semi-skimmed milk
  • Extra flour for dusting and grated cheese if desired.
  • Egg or milk to glaze

Step 1

Preheat the oven to 220°C (200°C Fan), Gas Mark 7 and line a baking tray with parchment. Lightly rub the butter into the entire scone mix to give a breadcrumb like texture. Mix in the egg and half the milk. Gradually add the remaining milk to form a soft dough.

Step 2

On a floured work surface fold the dough in half then turn through 90 degrees. Repeat this folding and turning 3 times. Be careful not to overwork your dough.

Step 3

Roll the dough to 2.5cm/1in thick. Using a 7cm cutter, stamp out rounds and place them onto the baking tray. 

Step 4

Any leftover dough can be worked and rolled again. Brush the tops with egg or milk to glaze, and grated cheese if desired. Place on middle shelf of the oven and bake for 15 minutes, or until risen and golden brown. Leave to cool, split in half and serve with your favourite cheese and pickle.

My Hints & Tips to Bake Bold

Add chopped walnuts to the dough mix and finish with grated cheese before baking to really enhance the flavourand appearance.
