Ready to try it yourself?

You Will Need:
  • 50ml (5 dessert spoons) olive oil
  • 320ml cool water
  • Lightly greased and lined 23cm round baking
    tin ready to place the bread in.
  • Extra melted butter for brushing

Step 1

In a large bowl combine the entire bread mix, oil and 250ml of the water. Add the remaining water a little at a time until you have a soft, sticky dough. You may not need all the water.

Step 2

Tip the dough onto an oiled work surface and knead for 10 minutes until smooth and silky. Prove in a covered lightly oiled bowl until doubled in size.

Step 3

Tip the dough onto a lightly floured surface and knock back, which means take the air out of the dough, do this be gently kneading. Divide into 16 equal pieces and roll into balls. Place one dough ball at the centre of the baking tin and arrange the rest around it.

Step 4

Cover with a clean plastic bag and leave to prove until doubled in size. I like to double prove my bakes as this enhances the flavour. Heat the oven to 220˚C (200˚C Fan), Gas Mark 7, place the loaf on the middle shelf and bake for 20 to 25 minutes or until golden brown. Allow to cool for a few minutes before transferring onto a wire rack. Brush with melted butter and serve warm.

 Try sprinkling sesame and poppy seeds onto each segment before baking to enhance the flavour and add texture.
